Funfetti White Chocolate Scones

Are you ready for a flavor explosion? Are you ready for some nostalgia vibes? Then keep reading because these scones are made with funfetti white chocolate chips, sprinkles, and topped with a vanilla lemon zest glaze that will have you searching for more.


Funfetti reminds me of my childhood. I remember getting boxed funfetti and making cupcakes all the time with extra sprinkles! I was at the store and came across these funfetti white chocolate chips, and instantly knew I had to create a magical masterpiece.





 

Recipe:


Ingredients:

- 2 cups flour

- 3/4 cup heavy cream, 2 tbsp for brushing

- 2.5 tsp baking powder

- 1 tsp cinnamon

- .5 teaspoon Himalayan pink salt

- 1 stick of butter, frozen

- 1.5 tsp vanilla extract

- 1 bag of funfetti white chocolate chips

- 1/4 cup of sprinkles

- 1 egg

- 1/2 cup sugar


Icing Ingredients:

- 1 cup confectioner sugar

- 1 tsp vanilla extract

- 4 tsp heavy cream

- Lemon zest from 1 lemon

- 1/2 juice from the lemon


Method:

  1. Gather all your dry ingredients in one bowl and mix. Set aside.

  2. In a second bowl, mix 1 egg, vanilla extract, and heavy cream. Set aside.

  3. Get your frozen butter and grate it using a cheese grater. This is important because grated butter is going to give the scone that consistency we want.

  4. Using your hands, slowly mix and work the butter into the dry ingredients. Massage the butter in to get a beautiful crumby consistency.

  5. Now, mix the wet mixture into the dry. Use your hands here too! Make love to it with your hands. You want it to be in the middle, not too wet and not too dry. If it looks like it's too dry add a little more heavy cream.

  6. Now add in your sprinkles and white chocolate. Mix enough so its vibing with the dough, but not over-vibing.

  7. Get a huge cutting board or use the countertop and add some flour so the dough won't stick.

  8. Form the dough into a circle pizza shape. Cut like a pizza!!

  9. Get a baking pan and line it with parchment paper. Put the cut scone-pizza in the fridge for 1 hour.

  10. Pre-heat oven to 400.

  11. Take your scone-pizza out the fridge and brush the tops with heavy cream.

  12. Bake at 400 degrees for 20 minutes.

  13. While the beautiful scones are baking, make your icing. Zest 1 whole lemon and add it in a bowl with all the other ingredients and whisk well. If it's too watery, add some more confectioners sugar. If it's too thiccc, add more lemon juice.

  14. Take out the scones and let them chill out for 5 minutes because they're gonna be super hot. Once cooled, drizzle with icing and get ready to fall in love!
