Cinnamon French Toast Crunch No-bake Cheesecake

Cheesecake is my favorite, and I've declared it as a pie at a very young age. For all you nerds out there, 3.14 is the Pi formula and 3.14 = March 14th. So, in middle school I started a Pi tradition with my stepdad and every March 14th, we ate cheesecake together in honor of National Pi Day.
Lately, I've been nostalgic and wanting to make cheesecake, but I wanted to try to create a no bake version. I stumbled upon some Cinnamon Toast Crunch in my pantry and quickly paired the two together and decided to create this beautiful beast.
Recipe:
Ingredients:
Crust:
4 graham crackers
1/2 bag Cinnamon Toast Crunch (save 1tsp for topping)
1 stick butter softened
1tbsp sugar
3 tbsp brown sugar
.5 tsp cinnamon
Filling:
1 small tub mascarpone cheese
2 packs cream cheese softened
1/2 cup sugar
1tsp vanilla extract
1 1/4 cup heavy cream
Equipment:
1 Springfoam pan
2 mixing bowls
Hand mixer (do not manually whisk!)
Big spoon
Food processor
Mixing plastic spatula
Method:
Food process your crackers and Cinnamon Toast Crunch. (You can make any crust you want, it’s easy. If you want to just use the traditional graham crackers, half a box)
Get a spring foam pan and put your goods from the food processor in there with the melted stick of butter. Pack it well with a big spoon. Make sure you pack it well so the crust stays intact. Freeze for 20 minutes.
Get two bowls. One bowl you are whisking your heavy cream for 5 minutes until it becomes thick and frothy.
In your other bowl you are mixing the cream cheese, mascarpone, vanilla extract, and sugar for 4 minutes or until very well blended and it’s a smooth consistency.
Now, using a spatula, slowly add in the the heavy cream mix to the cream cheese mix. Gently fold it in a little at a time until well mixed. Make sure you are folding gently and not stirring.
Take out the crust mix and now add your filling to the crust and freeze for 1 hour. I froze it so I could eat it faster, but I would recommend putting it in the fridge overnight lol
Take out and top with some whole Cinnamon Toast Crunch and the dust. Sprinkle some cinnamon too if you want!
Enjoy this with some dessert wine, as I did! No bake cheesecake takes the creaminess to a whole other level that you least expect and will leave you craving for more.
