Bacon Mac N Cheese Topped With Herb Toasted Panko and Burrata

Calling all cheese lovers!! Sweet baby cheese-us, buckle up for a wild ride because you are never going to want Mac n cheese any other way.
Cheese and I have a very happy relationship together. I don't think I could ever leave. The cheese guy at the grocery store knows me by name and every time I swing by we talk about cheese for 20 minutes and what wine I'm pairing the cheese with! This time, I told him I was determined to make the cheesiest Mac n cheese in history of cheesiest history of Mac n cheese and I'm 158% that I nailed it.
Basically I bought fresh small blocks of cheese and grated it myself. As you can see, there was a cheese party going on. I had a little bit leftover because this was enough cheese (I guess). So, basically grate as much cheese as you want! Or do until you have a good plate full as pictured above.
Recipe:
Ingredients:
Fresh grated Gouda cheese
Fresh grated gruyere cheese
Fresh grated extra sharp cheddar cheese
(Save a handful of cheese mix to add to top)
1 stick softened butter +1tbsp for panko
1/3 cup flour
1 package elbow macaroni
1/2 pack bacon, cooked and cut into small pieces
1 cup milk
1 cup heavy cream
1/4 cup panko, toasted
Seasonings:
Salt & pepper, garlic powder, paprika, Italian
Method:
First, make your roux. Combine butter and flour in a small pot and whisk till slightly brown (3min).
Then, add in your milk and heavy cream. Slowly whisk in your grated cheese mix. Save some for the top!!
Cook macaroni till al dente (Don't forget to salt your water!)
Once cooked and drained, add macaroni to cheese mixture.
Season season season!!
Get a glass baking dish (I used a rectangular 15x10 one) and add the macaroni and cheese mix to the baking dish.
Melt 1 tbsp butter in another pan and add panko. Toast for 5 minutes stirring occasionally.
Now, add more cheese to the top, followed by panko, and bacon.
Bake at 350 for 20 min so the top gets crispy.
Once done, serve with a whole burrata for each person!
